Ingredients – Serves 4:

  • 1 tbsp. coconut oil

  • 2 leeks, chopped and washed

  • 1 white onion, diced

  • 12.3 oz. (350g) risotto rice

  • 17 fl. oz. (500ml) vegetable stock

  • 3 rosemary sprigs

  • 2 oz. (60g) Parmesan cheese, grated

  • 3 tbsp. cream


Instructions:

  1. Sauté the aromatics: Heat coconut oil in a large frying pan over medium heat. Add the chopped leeks and diced onion, cooking for about 5 minutes until softened and fragrant.

  2. Toast the rice: Stir in the risotto rice and cook for 1 minute, stirring constantly to coat the grains with oil and enhance their flavor.

  3. Begin the simmering process: Pour in half of the vegetable stock and add the rosemary sprigs. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Stir occasionally until the liquid is mostly absorbed.

  4. Add stock gradually: Slowly add the remaining vegetable stock, stirring frequently. Cook for about 25 minutes or until the rice is al dente and creamy.

  5. Final touches: Remove the rosemary sprigs and season with salt and pepper to taste. Stir in half of the Parmesan cheese and the cream. If a creamier consistency is desired, add a bit more stock.

  6. Serve and enjoy: Dish up your risotto while hot, garnishing with the remaining Parmesan cheese.


Storage: Store in the fridge for up to 3 days or freeze in portions for up to 1 month.
