Hearty Jackfruit Curry with Potatoes and Green Veggies

Have you ever had Jackfruit? Jackfruit is a tropical fruit that grows in Southeast Asia, Africa and South America, but its pulled pork-like texture makes it a unique vegan meat alternative! Dive into the rich and exotic flavors of our Jackfruit Curry with Potatoes and Green Vegetables. This plant-based dish is a perfect blend of tender jackfruit, hearty potatoes, and fresh green veggies, all simmered in a fragrant curry sauce. It's a delicious and nutritious meal that's perfect for any night of the week.

Equipment You'll Need:

  1. Large Pot: For cooking the curry.

  2. Mixing Spoon: For stirring the curry ingredients.

  3. Knife and Cutting Board: For chopping the onion, garlic, ginger, potatoes, and green beans.

  4. Measuring Spoons and Cups: For accurate measurements of ingredients.

  5. Can Opener: For opening the canned jackfruit and coconut milk.

Ingredients - Serves 4
  • 1 tbsp. coconut oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp. fresh ginger, grated

  • 2 tbsp. curry powder

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1 tsp. turmeric powder

  • 14 oz. (400g) canned jackfruit, drained and shredded

  • 2 large potatoes, peeled and diced

  • 1 can (14 oz./400ml) coconut milk

  • 1 cup (240ml) vegetable broth

  • 1 tbsp. tomato paste

  • 1 tsp. salt

  • ½ tsp. black pepper

  • 2 cups (150g) green beans, trimmed and cut into 1-inch pieces

  • 1 cup (150g) peas

  • Fresh cilantro, for garnish

  • Cooked rice or naan, for serving


Instructions:


Step 1: Prep the Ingredients

  • Peel and dice the potatoes, chop the onion, mince the garlic, and grate the ginger. Trim and cut the green beans.

Step 2: Sauté the Aromatics

  • In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  • Add the minced garlic and grated ginger, cooking for another minute until fragrant.

Step 3: Add the Spices

  • Stir in the curry powder, ground cumin, ground coriander, and turmeric powder. Cook for 1-2 minutes, allowing the spices to bloom.

Step 4: Add Jackfruit and Potatoes

  • Add the shredded jackfruit and diced potatoes to the pot, stirring to coat them in the spices.

Step 5: Add Liquids and Simmer

  • Pour in the coconut milk, vegetable broth, and tomato paste. Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.

Step 6: Add Green Vegetables

  • Stir in the green beans and peas, cooking for another 5-7 minutes until the vegetables are tender but still bright green.

Step 7: Serve and Garnish

  • Serve the jackfruit curry over cooked rice or with naan bread. Garnish with fresh cilantro before serving.
